Our story
Coffee heritage, roasted with craft
12:12 started with one roaster, one bench and a stubborn belief that great coffee should be honest, repeatable and generous.
Why 12:12
Twelve twelve is the moment the day tips over — the second cup, the reset, the pause that makes the afternoon work. We named the roastery after it because that is the cup we obsess over: not the ceremonial first one, but the one you actually choose.
Every batch is roasted on a modern drum roaster with full profile logging, cupped the following morning, and released only when it matches the reference. If a batch drifts, it does not ship.
We buy from importers who publish farm-gate pricing, and we pay above market for the lots we return to season after season. Relationships beat spot buying, in the cup and everywhere else.
How we work
Sourced
Seasonal lots from Ethiopia, Colombia, Brazil and Vietnam, chosen on the cupping table rather than the spec sheet.
Roasted
Small batches, profile-logged, roasted to a reference curve and quality-checked against the last release.
Rested
Beans rest before dispatch so the cup you brew at home tastes like the cup we approved at the bench.
Shipped
Out the door within 48 hours of roasting, with the roast date printed on every bag. No mystery stock.
